ABTs (Atomic Buffalo Turds)

Atomic buffalo turds (or treats) prepared by the BBQ Guru competition team of Bob Trudnak and Kenny Baker. The snack consists of jalapeno halves stuffed with seasoned cream cheese and wrapped with apple-smoked bacon.

These spicy nibbles are very popular on the barbecue circuit, according to Bob Trudnak.

Use your favorite barbecue seasoning or dry spice mix, such as Creole seasoning. Trudnak likes Dizzy Pig Dizzy Dust, which is available at the BBQ Guru showroom in Warminster.

Though seasoned cream cheese is the most common filling, you could stuff the peppers with almost anything you want, from other cheeses to little bits of meat.

If your guests ask what ABT stands for - and the real name makes you uncomfortable - "call them Atomic Buffalo Treats," Trudnak says.

1 dozen large jalapenos

16 ounces cream cheese, softened

1½ teaspoons of Dizzy Pig Dizzy Dust (or your favorite barbecue seasoning), plus more for dusting

1 pound bacon

Cut the jalapenos in half lengthwise and scrape out the seeds and ribs.

Stir the seasoning into the cream cheese. Mound into the jalapeno halves.

Cut the bacon slab down the middle, so each slice is divided in half. Wrap each jalapeno with a half-slice of bacon. Sprinkle with additional seasoning.

Heat a grill to 275 degrees. Cook for 1¼to 1½ hours, or until the bacon is crispy.

Makes 2 dozen.
